Jagblade-DN
So is there any rhyme or reason to which of the three pet interactions you should choose when the cooldown is up? I've noticed that sometimes a special emote plays, hearts appear around the pet, and its happiness bar gets a big boost. Other times it gets a tiny boost and nothing really happens. Is it just a random proc or should I choose an interaction based on what the pets says?

What I was able to find: Choosing an available emote will trigger a reaction from the pet and its mood will increase (Each emote offers the same increase in mood). Pets have three random reactions when you interact with them – normal, good, very good – Very Good increases the pet mood more than the others. This reaction is not common and has a low percentage of occurrence (roughly 10%). Watch out for the special animation when your pet gives a Very Good reaction. I was curious on this too.
