Either tailoring or alchemy. Tailoring will let you craft armor for yourself, Alchemy will let you craft weapons, potions, scrolls. Normally as a Sorc I'd recommend Alchemy as making your own potions and scrolls is useful however (On Siel at least) everyone is doing Alchemy yet I haven't seen too many people doing Tailoring.

Well... once you fill that requirement, whats after? It depends how you look at it. The only profession worth it long term is alchemy for potions and scrolls. 

Once that happens, what the uses of the other profession if they're maxed after the quest. Is there anyone going to need 20% running boots? how long would those last? Short term? yeah its decent.. long term? The only uses after that is crafting skins. High levels aren't going to buy low level item for their stats. High level item(current cap items) either cost more to make than the product it self(unless you spend the time getting all the mats) or get lucky when someone would pay what it cost to make..(including fails) and that imo isn't worth the effort.
